Lemon Pie Bars
Crust:
1c butter
½ c powdered sugar
2 c flour
Mix and press into lightly greased 9×13 pan. Bake at 350 for 15 minutes.
Filling:
4 beaten eggs w/ ¼ tsp salt
2 c sugar
½ c flour
4-6 Tbsp lemon juice (to taste)
Mix together and pour over baked crust. Bake at 350 for 25 minutes. Allow to cool completely before frosting.
Frosting:
¾ c powdered sugar
½ c butter
2 oz cream cheese
½ tsp lemon juice
2-4 Tbsp milk
Mix frosting ingredients until smooth, adding milk a tablespoon at a time if mixture is too thick. Allow bars to cool completely before frosting.
